chicken salad

This really can't get much easier, and it really doesn't need a ton of chicken - often I can get enough from a leftover baked chicken, even if we ate most of it!

Chicken Salad with Apples and Raisins
1 1/2 C cooked chicken
1 medium apple, finely chopped
2 stalks celery, finely chopped
1 small onion, chopped
1/2 C mayonaise or plain yogurt (adjust to taste/texture you want)
1/2 C golden raisins (try dried cranberries)
1/2 tsp sea salt
pepper to taste

Combine all ingredients in a bowl. Serve on pitas, make a sandwich with a slice of cheese and whole wheat bread, or dip into it with crackers.
