Whether vegetarian for dinner or forever, this is a meal that will bring everyone together. Bonus: it's nearly prep-free cooking. :)
Herbed Lentils-n-Rice
6 C vegetable broth (or, if vegetarian isn't an issue, use chicken broth!)
1 1/2 C lentils (any kind will work, we like the little black ones. Hmm, what was their name?)
1 medium onion
1 C brown rice
1 tsp salt
1/4 tsp pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp garlic powder
1 tsp dried marjoram
1 tsp dried basil
1 C shredded mozzarella or cheddar cheese, for topping. *optional*
Combine everything. Cook in the oven at 350 degrees F for 1 1/2 - 2 hours, or in a crock-pot on low for 3-4 hours (or crock-pot on high for 1 1/2 hours).
Add a salad or crisp veggies & fruit on the side, and viola! Dinner is served.
