These are a favorite at our house, and a good way to use up over-ripe bananas.
1 C whole-wheat flour
1/2 C all-purpose flour
1/4 C oat bran
2 tsp baking powder
1/2 t salt1 C mashed bananas (about 3)
1/2 C honey
1/2 C buttermilk
1 large egg
2 Tblsp oil
2 Tblsp fresh lemon juice
1 1/2 C fresh or frozen (thoroughly rinsed) blueberries
Preheat oven to 400. Line 12 muffin cups or grease pan.
Combine flours, oat bran, baking powder, and salt in bowl.
Place mashed bananas in separate bowl. Stir in honey, buttermilk, eggs, oil, and lemon juice. Whisk thoroughly.
Mix dry ingredients into wet ingredients until barely combined, then fold in blueberries.
Divide batter evenly into muffin cups, about 2/3 full. Bake until toothpick inserted in the center of a muffin comes out clean, about 30 minutes.
Yummy warm or at room temperature.
